Pickling is a ancestral way of keeping fresh fruit and vegetables by the growth of microbes that would help them to decompose. The food to be pickled is usually deep in hot or cold vinegar. Vinegar damages the growth of harmful microbes and gives the food a tangy flavor. Salt is often blended to diminish the moisture content. Thus, the sodium level of the food is much higher. Many nutrients are lost in the pickling process.
